Pinkeye Purple Hulls are productive, compact plants that grow about 2 feet tall. They do not require staking and thrive in drier conditions compared to other bean varieties. Also known as crowder peas, cowpeas are very nutritious; they are low in fat and high in fiber and protein. You can enjoy fresh cowpeas and shell seeds or consume them in the pod approximately 60 days after sowing. When the peas swell inside the pod, it indicates that the seeds are developing but not yet fully mature. For dried beans, harvest the pods once they are dry and straw-colored. Additionally, the young foliage is edible and can be prepared similarly to spinach. At the end of the growing season, if the plants are disease-free, they make excellent compost material.
