Rattlesnake Bean

Rattlesnake beans thrive in the hot, humid regions of the Southeast. For the best flavor and texture, pick the pods when they are small to medium-sized to prevent the development of "strings." This bean variety is a favorite across the South due to its full flavor and rich, sweet taste. The green pods are streaked with purple but change to green when cooked. They are very tender and can be frozen without becoming rubbery, unlike many other bean varieties. Rattlesnake beans are also excellent for canning and can be enjoyed fresh.
